Watermelon Daiquiri

It’s been a while since I shared a cocktail on the blog. The last one was this Frozen Aperol Spritz, which honestly is still a winner in my book. However I did think it was time to share another cocktail recipe because we’re all going through a lot and it’s Friday and it’s 5 o’clock somewhere, right? This Watermelon Daiquiri is as delicious as it is lethal. It’s one of those drinks that you down a couple thinking it tastes like nothing at all and then all of a sudden it hits you. Consider that a fair warning. All that aside though, it’s a refreshing drink that is perfect for this warming weather. Keep it in mind as summer approaches and the watermelon get riper and riper. This would also be delicious with strawberries as well—something to think about for sure.

In a medium saucepan, combine the sugar, water, ginger and thyme. Set over moderate heat and bring to a simmer. Cook until the sugar has dissolved. Remove from the heat and transfer to a pitcher or measuring cup. Set aside to cool.

**Tip: If you don’t want to take the time to make the ginger thyme simple syrup, you can substitute it for either honey or agave syrup!**

Place the watermelon in a blender and purée until smooth. Pour into a large measuring cup or pitcher, through a fine mesh strainer, to remove the pulp.

**Note: Make sure you have a seedless watermelon for this because you don’t want to be blending it with the black seeds running all along it.**

Chill in the fridge until ready to use. This will make enough juice for about 8 cocktails, and it can be prepped the day before and kept in the fridge until ready to use!

Coat the rim of a coupe glass with a bit of lime juice (I just run a lime wedge along the rim) and then dip in a bit of salt. Place the salt in a shallow dish to make it easer to coat the rim!

In a cocktail shaker, combine the white rum, lime juice, 1 tablespoon of the simple syrup, and 3 tablespoons of watermelon juice. Fill with ice, cover and shake vigorously until well-combine and thoroughly chilled, about 15 seconds.

Strain into the prepared coupe glass and garnish with a watermelon wedge. Enjoy right away!

I wrote the recipe to make one cocktail, BUT you’ll have enough fresh watermelon juice and simple syrup for about cocktails. If you want more, you can easily double both!

The salt rim is optional and not so traditional when it comes daiquiris, but honestly it makes all the difference in this version. The sweetness from the watermelon with the salt helps balance the drink so perfectly!

Watermelon Daiquiri

Watermelon Daiquiri is just what you need on a Friday evening after a long work week. Made with freshly blended watermelon juice, white rum and a homemade ginger thyme simple syrup. It's just what you need!

Ingredients
