Cacio e Pepe Potatoes Anna + GIVEAWAY!

Today I’m celebrating the release of Deb Perelman’s second cookbook “Smitten Kitchen Every Day.” I’ve been looking forward to this for a while now because I’ve been such a big fan of Deb and her work for a very long time. There are so many food blogs nowadays, too many to keep track of, but when you think of the original pioneers from way back when, there are a few names that come to mind, three in particular; Deb, Joy and Ree. They set the tone for this business and inspired many of us to create out own blogs. For me, this was no exception and it especially rings true. I remember looking at Smitten Kitchen early on and loving the concept behind it. The idea of showing step-by-step photos and not just the final product, because to me cooking is very visual and I feel like it’s important to see the process for each recipe when cooking something for the first time. I remember thinking how much fun it must be to have a blog and share your recipes and have a voice somewhere. It was at Deb’s first book signing where I met Joy and started working with her/building an awesome friendship so it’s no surprise that I owe Deb for that.

This second book is beautiful, well written, and so inspiring. If you’re a fan of Deb and her blog as well, then you need this book. Lucky for you, I’m hosting a GIVEAWAY to one lucky winner! I’m making the Cacio e Pepe Potatoes Anna from the book. Which if you haven’t had cacio e pepe, you need to. Let’s focus on this cheese-pepper mixture because this is what’ll make it taste like cacio e pepe. In a small bowl, toss together the Parmesan and Pecorino, potato starch or cornstarch, salt and pepper. 

**Note: Deb lists 1/2 teaspoon black pepper, but says that we can add more if we want, and I DEFINITELY want because I love black pepper. So I upped it to 1 tablespoons. And I did a mixture of Percorino and Parmesan because I like the two together in cacio e pepe.**

Coat the bottom of a 9-inch cast iron skillet with a tablespoon of melted butter or olive oil. Then layer sliced potatoes on the bottom in an even layer, in concentric circles. Then sprinkle with 1 teaspoon of melted butter and 2 tablespoons of cheese-pepper mixture. 

Repeat four more times, or until the potatoes are all used up. Then lightly coat a sheet of foil with nonstick cooking spray and cover the skillet tightly. Bake in a preheated 375 degree F oven for 35 minutes. Remove from the oven and using oven mitts press down with the foil to firmly pack down the potatoes. Return to the oven uncovered for another 25 to 30 minutes. 

Place the potatoes under the broiler just to evenly brown the tops of the potatoes. Remove from the oven and let cool slightly before slicing and serving. 

**Note: There might be a pool of excess butter or oil, but you can just tip it over and discard the excess before inverting onto a plate and turning right side up.**

While the galette bakes let’s make a very simple salad. In a large bowl toss together the arugula, olive oil, white wine vinegar, salt and pepper. You want to keep the dressing lightly dressed. 

**Note: Deb uses regular arugula for the salad, but I’m a really big fan of baby arugula so that’s what I’m using, but feel free to switch it out for what you love. Baby spinach would be great as well!**

Top the galette with the salad before cutting and serving. If you have any salad leftover you can serve it along side as well. I love a lot of it on the potatoes so I’m not complaining. 

Sprinkle the top of the galette and salad with the reserved cheese-pepper mixture. It adds a nice salty-spicy kick to the top of the potatoes and I love it. 

You can make the potatoes ahead of time and keep in the fridge for up to 3 days and then reheated in the oven covered with foil. Just make the salad the day you plan on serving the galette. 

 
I love cacio e pepe in general because it’s so simple to make but packed with so much flavor and it’s vegetarian which is sometimes nice for me every now and then. This galette could be a great light lunch or quick weeknight dinner! It’s a great brunch recipe as well, so keep that in mind the next time you’re brunching.

Cacio e Pepe Potatoes Anna + GIVEAWAY!

Cacio e Pepe Potatoes Anna from Deb Perelman's second cookbook Smitten Kitchen Every Day. Cacio e Pepe meets potato pancake/gratin.

Cook Time 1 hour
Total Time 1 hour 20 minutes

Ingredients

  • 1/4 cup finely grated aged Pecorino Romano
  • 1/4 cup finely grated Parmesan
  • 1 tablespoon potato starch or cornstarch
  • 1/2 teaspoon salt
  • 1 tablespoon coarsely ground black pepper
  • 3 tablespoons melted unsalted butter
  • 2 pounds Yukon Gold potatoes peeled, cut into 1/8-inch thick rounds

Salad:

  • 4 cups loosely packed baby arugula
  • 1 tablespoon olive oil
  • 2 teaspoons white wine vinegar
  • pinch of salt and pepper

Instructions

  • Preheat oven to 375 degrees F.
  • In a small bowl, toss together both cheeses, potato starch or cornstarch, salt and black pepper. Set aside.
  • Pour 1 tablespoon of the melted butter into the bottom of a 9-inch cast iron skillet, and swirl it around to evenly coat the bottom and sides. Arrange the potatoes in overlapping concentric circles in a single layer at the bottom of the pan. This will use approximately a quarter of your sliced potatoes. Drizzle with 1 teaspoon of butter and sprinkle with 2 tablespoons of the cheese-pepper mixture. Repeat four times, or until the potatoes are used up; you should have about 1 tablespoon of the mixture left over; reserve this.
  • Lightly coat a sheet of foil with nonstick spray and tightly cover the pan. Bake for 35 minutes. Using pot holders, firmly press onto the foil to compact the potatoes a bit. Remove and reserve the foil, and bake for another 25 to 30 minutes, until lightly brown all over. Remove from the oven and press down again with the reserved foil. Place under the broiler briefly, until evenly golden brown on top.
  • While the galette bakes, toss together the arugula with the oil and vinegar and season lightly with salt and pepper.
  • Once the galette is out of the oven, let it rest in the skillet for a few minutes before running a knife around to ensure that it is loose. Gently tip the skillet over your sink to drain any excess butter or oil. Invert it onto a plate or cutting board, then flip right side up. Cut the galette into wedges, then top with the dressed greens, and sprinkle with the reserved cheese-pepper mixture. Enjoy!

    Love your blog! Just two weeks ago I made Deb’s Double Chocolate Layer Cake for my boyfriend’s birthday. First (smile) birthday cake I’ve made him, since last year we were fleeing from Hurricane Matthew on his big day. He loved it…I loved it! I made it into a 3 layer cake and it was magnificent!   11. Picking just one recipe is so hard. I use her blog as a guide to my life. But the recipe I probably make most often is based on the rugelach recipe in her first cookbook. I think that page is covered in flour and naturally falls open to that place.

I have many, many cookbooks and love them all for one thing or another. I’m not very familiar with Smitten Kitten except through Joy. So I think I need this cookbook!   29. Deb and Joy are the two bloggers I consistently visit more than any others (besides you, Jonathan!). Deb is always my first go-to when seeking any savory dishes and Joy for her (duh!) baking. I know with certainty that anything I make of theirs will be excellent. So hard to narrow down my favorites from Smitten Kitchen but the ones that immediately come to mind are the farro with tomatoes, black bean soup, cacio e pepe pie and the amazing kugel with dried tart cherries!   44. So many! I’ve been “cooking with Deb” since 2012, and have never had a bad outcome with her recipes. If I have to pick one, then her recipe for Pho is it. The broth is amazing and fragrant. I make a bunch of it and freeze it to use through the winter.

  45. Oh man, is it even possible to choose just one favourite? I think nearly all of my go-to recipes are very slightly adapted from her site and book.

    My two favourites (I’ll choose a sweet and savoury) are her “tiny but intense chocolate cake” from her first book (I actually made a tiered version for my wedding cake!), and the sausage and cabbage bake from her site (we serve it with buttery mash instead of crusty bread). I feel like the cook I am today has been almost entirely influenced by Deb.

  60. Smitten Kitchen has such comforting savory dishes, and even though I’m generally more inclined towards those savory things, my favorite this past summer was the Strawberry Graham Icebox cake. This has to be one of the greatest desserts ever conceived, and constructing it makes you feel like a rockstar. So happy to have this (and a few of her other recipes) in my pocket!

  62. Choosing a favorite Smitten recipe is tough, there are so many that I love and have made over and over again. For a savory dish, my favorite is the mini meatloaves with tomato glaze and brown butter mashed potatoes, and for dessert, I love her chocolate and olive oil cake.

  64. Boy, I sure do love the smitten kitchen! I wouldn’t know where to start with my favorite recipie…there are so many! Deb has a lot of repeatable recipies, which is one reason that I think makes her stand out. This summer the favorites would have to be the zucchini bread tweaked to use more zucchini, and the zucchini fritters. Can you tell I had a garden with a lot of zucchini this year?!

I do change the recipe as suggested by someone in the comments and make the sauce with sour cream and it is divine.   91. Deb Perelman is a treasure. Last night my husband and I had her summer squash pizza for dinner and tonight we’re having her Sharlotka for dessert. I think my favorite is her Feta tapenade tarte Soleil, it’s deeelicious and surprisingly easy to make. My daughter and I “ discovered” Deb at the same time and we’ve been cooking with her ever since.

    I’ve made Deb’s spiced applesauce cake more times than I can remember right now. The cake is so simple, so moist, so delicious, and easily transitional for vegan eaters (I live in L.A. and have dairy-free friends, as it often happens in L.A.). It’s a winner every time I make it for whomever I make it for, but let’s be real, sometimes this cake is just for me and myself.

I’ve made at least a couple dozen of her recipes, but my favorites on rotation are the roasted eggplant-walnut pesto pasta salad, a bagel recipe from the archives, and her black and white cookies.   110. wow.. what haven’t I made of hers…her homemade graham crackers were amazing…my whole fam (esp my toddler ) loves her whole wheat cheese “goldsish” crackers and we are going to be making her pot pies soon… can’t wait to try one of your recipes as I stumbled (don’t remember how ) on your blog a while a go and those waffle corn dogs….. as I really do need another waffle iron (because that is why you don’t mention to your mom that you want a waffle iron because then it randomly show up at your door…unexpected…when you alone because you husband is out of town on a work trip ….#truestory)

    Her recipes are so reliable and well-tested, it’s hard to choose just one! But one I made this past week, is her pumpkin bread. It uses the whole can of pumpkin and is so moist and deliciously and actually tastes like pumpkin, not just spice. So, so good. Can’t wait to try these potatoes!

  115. Hello fellow Deb fans! It’s hard to choose just one recipe since I’ve found many Smitten Kitchen gems, but the most successful in my kitchen were probably her banana pudding and chocolate mousse recipes!

  116. I love Deb! Her chocolate stout cake was an early fave of mine. It was one of my first baking projects and also inspired me to buy a bundt pan. Her dilled potato salad with pickled cucumbers is one of my husband’s favorites. And a family favorite is her one bowl jacked up banana bread, which my kids love to make and eat.

  125. I made this last night and it was SO GOOD! Served 4 maybe, I think 8 is a stretch. The arugula salad with it is a revelation!

    I like all the smitten kitchen recipes. I always make the Mushroom Bourguignon for family holidays as a veg option and the meat eaters end up inhaling it!

  127. How do I choose just one?! I love all of Deb’s recipes. I can always trust they will turn out. I think I’ll have to go with her recipe for blueberry crumb cake. It is absolutely delicious with fresh blueberries in the summer! I really want to make her chocolate tahini challah buns. I think I’ll try my hand at them this week in honor of her cookbook release!     SUCH a fan of Deb and Smitten Kitchen! One of my faves is her summer squash pizza (translated nicely into a grilled cheese recently). It’s rich and decadent yet oddly light because – vegetables!

  135. My absolute favorite recipe, which I make all the time is The brownie roll out cookies. They are always a hit, easy to make and so so delicious. (Although “my old school baked ziti” comes in a close second! I love everything Deb makes!)

  138. Yum, this recipe looks great and your extra peppery version sounds fantastic. I’m a huge Smitten Kitchen fan! I just made her roasted sausage, potato and shallot dish but I am also a huge fan of her baked goods – snickerdoodles, her tiramisu cake and her stout chocolate cake have made regular appearances on our holiday table!

  139. I love Deb’s “Surprise Me” button! It has helped me find many dinner ideas when I’m not feeling too inspired on my own. Her crepe recipe is foolproof, and I use it all the time.

I have had two of your waffle recipes on my project list forever, one because it was from one of my food idols of early days Marion Cunningham and the other because it’s seasonal: essential raised waffles and your pumpkin waffles! I’ve made so many others over the years it’s hard to pick a favorite. You give all small kitchen cooks hope with everything you put out from your own tiny space. Thanks for sharing it all with us!

  141. I’ve made so many recipes from smitten kitchen. Just last night in fact I made her butternut and caramelized onion galette. I added bacon and used Joy’s pie crust with less sugar and it was amazing.
