Birthday Cake Sundaes

Birthday Cake SundaesToday is my middle sister’s birthday and so I thought it would be appropriate to share these super easy-to-make Birthday Cake Sundaes. I try to keep this funfetti theme going every year, like with these Birthday Cake Cupcakes, Birthday Eclairs, and Birthday Streusel Muffins, and so these sundaes fit right in. The great thing about this recipe is that there’s almost no cooking involved and you can put it together with not much effort on your part, which is just what a summer dessert should be like. It of course, doesn’t have to be your birthday in order for you to celebrate with this treat, because as far as I’m concerned, birthday cake always tastes better when it’s someone else’s birthday. 

So this isn’t so much a recipe since the only thing we’re actually making is a fudge sauce to on top of our sundaes. It’s a white chocolate funfetti fudge sauce and it’s quite addicting. Place the chopped white chocolate and coconut oil in a bowl and set over a medium pot of barely-simmering water, making sure the bottom of the bowl does not touch the water.

**Note: This is the one time where I highly recommend using a double boiler method for melting the chocolate and not use a microwave because white chocolate is so temperamental and you don’t want it to seize.**

Cook, stirring often, until the chocolate has melted and is completely smooth. Remove from the heat and let cool slightly. Stir in the vanilla and imitation vanilla (if using). Once the chocolate has cooled down, gently stir in the sprinkles just until combined.

**Note: You don’t want to over mix or else the colors will bleed into the chocolate and you’ll get a grayish mess and you won’t be able to see the sprinkle bits.**

Pour into a small container for your guests to serve themselves or just keep in that large bowl if you plan on assembling the sundaes yourself. 

**Tip: If the chocolate sauce gets too thick, you can set the bowl over the simmering water once again until it loosens up. Again, try not to stir it too much at that point so that the colors don’t bleed.**

To assemble the sundaes, peel the bananas crosswise and then slice each half lengthwise. Place two pieces of banana in six bowls. Top each with two scoops of ice cream and with some of the chopped lady fingers.

**Tip: Because I want these sundaes to taste like birthday cake, I topped them with chopped up bits of spongy lady fingers, but you can also use store-bought pound cake, angel food cake or sponge cake!**

Spoon some of that funfetti fudge over the top and dollop with fresh sweetened whipped cream and more sprinkles and cherries (if using). Serve immediately and enjoy!

As for the ice cream, you can use store-bought vanilla cake or if you really want to hone in on that birthday cake flavor, then you can most definitely use a birthday cake flavor if you can find it at your grocery store.

**Note: I used birthday cake Halo Top ice cream. This isn’t an ad for it, it’s the only birthday cake flavor I found at my store. It needs more sprinkles and birthday cake flavor, in my personal opinion, but it got the job done.**

This is one of those recipes that you can’t really make ahead of time, but honestly it’s one of those recipes that isn’t really a recipe so it’s all good. I guess if you want to plan ahead of time, you can scoop out the ice cream onto a baking sheet with parchment paper and place in the freezer and make the whipped cream and keep it in the fridge. Then just make the fudge right before assembling and serving!

Happy Birthday to anyone out there who happens to have a birthday today, yesterday, tomorrow, within the week or this month. Give this birthday treat a try because you deserve it. And even if it isn’t your birthday, and it’s not anywhere near in sight, go ahead and treat yourself with these sundaes anyway because you also deserve it.

Ingredients

  • 8 ounces white chocolate chopped
  • 3 tablespoons coconut oil
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon imitation vanilla extract optional
  • 1 tablespoon rainbow sprinkles finely chopped
  • 3 semi-ripe bananas
  • 1.75 qt Vanilla or Birthday Cake flavored ice cream
  • 3 ounces soft lady fingers or sponge cake chopped
  • 1 cup fresh whipped cream
  • 2 tablespoons multi-colored sprinkles for topping
  • 1/4 cup maraschino cherries optional

Instructions

  • Place the chopped chocolate and coconut oil in a bowl and set over a medium pot of barely-simmering water, making sure the bottom of the bowl does not touch the water.
