Egg-in-a-Hole Breakfast Grilled Cheese

This Egg-in-a-Hole Breakfast Grilled Cheese takes the classic grilled cheese and turns it into a delicious breakfast sandwich. You can switch things up a bit by playing with the filling. Breakfast sausage, turkey bacon or even avocado would all be great swaps. These are great for weekend breakfast or brunch, so keep them in mind!

Egg-in-a-Hole Breakfast Grilled Cheese is one of my favorite breakfast sandwiches. It combines two great sandwiches into one delicious dish!

Ingredients
- 8 slices sourdough bread
- 6 tablespoons unsalted butter
- 8 large eggs
- 8 slices Cheddar cheese
- 12 slices thick-cut bacon cooked until crispy
- Kosher salt and coarse ground black pepper
- 1 tablespoon chopped chives for garnish
- Ketchup for serving
- Hot sauce for serving
Instructions
- Use a 2-inch round biscuit cutter to cut a hole in the center of four of the slices of bread and set aside.
- Place a griddle (or large non-stick pan) over medium-low heat. Add 3 tablespoons of butter. Place the slices of the holey bread on the melted butter and carefully crack an egg into the center of each. If you don’t have a griddle big enough to cook all four sandwiches at once, you’ll have to work in batches. Cook until the bread is golden brown on the bottom and the egg white has set, about 3 to 5 minutes. Top each with a slice of cheese, three slices of bacon, another slice of cheese and the second slice of bread.
- Carefully flip over each sandwich and add the remaining butter to the griddle, allowing it to melt and flow through the pan to coat the underside. Cook until the second side has browned and the cheese has melted through, about 3 minutes.
- Season the egg side of each sandwich with a pinch of salt and pepper. Serve with a sprinkle of chives and ketchup and hot sauce on the side. Enjoy!
Notes
You can brown the rounds of bread you cut out with a bit of butter and serve with the sandwiches as well!
