Peanut Butter S’mores Hand Pies

It is way too hot these days to be dreaming about making s’mores outside on an open fire. The whole outside is like an open fire! LA is complaining about the heat every chance we get (myself included), and so I wanted to bring a classic summer dessert indoors. Away from the sun. Away from the heat, and away from any open flames. These Peanut Butter S’mores Hand Pies for GO BOLD WITH BUTTER, are a great summer treat to make because you can do it in the comfort of your air-conditioned home. Homemade pie crust is filled with creamy peanut butter, dark chocolate chips and mini marshmallows. They’re sprinkled with a graham cracker sugar topping and baked until golden brown and flaky. It’s like s’mores and pies coming together to create the perfect on the go summer treat. Don’t let the weekend go by without making these hand pies for yourself. You won’t regret it. 

The first thing we need to get done and out of the way, is to make the homemade pie crust. This is pretty basic as far pie crusts go. In a large bowl, combine the flour and salt.

Then add in the butter and work in with your fingers or a pastry blender until the mixture resembles coarse crumbs about the size of peas. 

**Tip: You don’t want to over-work the butter because you want it to be as cold as possible. Big bits of cold butter here and there are what make for a flaky crust.**

Add the ice cold water, one tablespoon at a time, mixing with a wooden spoon until the mixture comes together. Cut the dough in half and wrap each half in plastic wrap, shaping into a disc. Chill for for at least one hour. 

**Tip: You can make the pie dough ahead of time and keep it in the fridge until ready to use. Just make sure to let it sit at room temperature for at least 30 minutes before rolling out. Pie dough can be frozen for up to 3 months and then thawed in the fridge overnight.**

Working with one half of dough at a time, lightly flour a work surface, and roll out to a large rectangle, about 1/4-inch thick. Using a sharp knife or a pizza cutter, trim the edges to form a smooth rectangle. Cut into 12 smaller rectangles and place 6 rectangles on each baking sheet. 

Top each pie dough square with a tablespoon of peanut butter on each square and sprinkle with chocolate chips and marshmallows.

**Note: I used smooth peanut butter because that’s normally what I have on hand, but feel free to use crunchy if you’d like! Just make sure you use the processed cheap peanut butter. This isn’t the recipe for the super organic thinner stuff.**

Roll out second dough half, trim the sides and cut into 12 even rectangles. Place 1 rectangle on top of each filled rectangles and crimp the sides together using a fork. Use a sharp paring knife to make a few slits on top of each hand pie to allow steam to escape during baking.

**Tip: Brushing the hand pies with egg wash and sprinkling them with a mixture of granulated sugar and crushed up graham crackers will give them a golden brown color and a great texture! The graham cracker sugar is an ode to the graham crackers in s’mores, so I highly recommend it!**

Bake in a preheated 375 degrees F oven until golden brown, about 25 to 30 minutes. Remove from oven and allow to cool before serving.

At this point you can eat them when cooled down and still slightly warm, or you can let them cool down completely and store in an airtight container at room temperature for up to 3 days.

 
If you’d like to freeze the hand pies you can place them in a large freezer ziplock bag and remove the air. Then pop in the freezer and keep in there for up to 3 months. 

**Tip: To rewarm, you can place the hand pies on a baking sheet and heat in a 350 degree F for about 8 to 10 minutes to warm through!**

These are meant to be eaten on the go, without any plates or fuss. It’s like bringing a summer campfire treat into your house, but if you really want to take them over the top, you can serve them in small bowls…with a giant scoop of ice cream on top. I would not be mad at that at all.

The next time you’re craving a s’mores, but want to elevate them a tad, you should make these little hand pies! You owe it to yourself, to your family and your friends. And because I’m no monster, if you really want to make these as fast as possible, you can use store-bought pie dough. I won’t say anything, if you don’t.
