Supreme Pizza Gnocchi

I’ve been doing this blog now for 10 years and I have to say, I’m always looking for new and exciting ways to reinterpret store bought gnocchi. I find that it’s a staple and convenient store-bought ingredient that can be adapted a million different ways and it the epitome of quick and delicious. Over the years I’ve shared so many great versions of gnocchi. Like this shrimp scampi version or this french onion soup mash up or my personal favorite, this carbonara gnocchi to name a few. There is a bunch! Today though I’m bringing you this Supreme Pizza Gnocchi. It’s jam-packed with all of my favorite loaded pizza toppings and together it’s a dish that will please everyone!

Set a large pot over moderate heat. Once hot, drizzle in the oil and add the sausage. Break up with a wooden spoon and cook until crispy and no longer pink. Add the pepperoni slices and cook until just beginning to crisp up. Use a slotted spoon to transfer to a plate and set aside.

**Tip: If you want to cut some of the fat from this dish, you can swap out the pork sausage for chicken or turkey sausage and use turkey pepperoni instead of the classic pork pepperoni.**

Add the mushrooms and red onion to the same pot and cook until softened and browned. Stir in the bell peppers, black olives, oregano, basil, fennel, crushed red pepper flakes, and a pinch of salt and pepper. Cook until the bell peppers have softened, about 5 minutes.

**Tip: You can add all or some of the veggies listed. Adapt it to your taste and preference. It doesn’t have to be exactly as I’ve written it, if you don’t like any of the ingredients.**

Return the sausage and pepperoni to the pan and stir in the jarred pizza sauce and the cooked gnocchi.

**Note: I just cooked the gnocchi in boiling water according to the package directions. You can cook them to your liking.**

Give it all a big stir and then spread out evenly. Remove from the heat and sprinkle the mozzarella and parmesan over the top.

Season with a tiny bit of dried oregano and/or crushed red pepper flakes. Pop under a preheated broiler until melted and golden brown on top.

This would be great for a quick and easy dinner along with a simple green salad on the side or a Caesar salad would be great too because there is no better combo than pizza and a Caesar. It’s a match made in heaven.

If you find pizza sauce too sweet or you just want to use something else, marinara or your favorite pasta sauce will work just fine too.

I want this dish to not be fussy. I want it to be easy and painless so that’s why I’ve given you so many options. It doesn’t have to be overly complicated in the slightest. I hope you give this one a try because I know you’ll love it!

Supreme Pizza Gnocchi

This Supreme Pizza Gnocchi combines two of my favorite dishes, supreme pizza and gnocchi to form the ultimate mash up dish. It's a keeper!

Equipment

  • Large pot
  • box grater

Ingredients

  • 2 tablespoons olive oil
  • 2 mild or hot Italian sausage casing removed
  • 4 ounces regular or turkey pepperoni
  • 1 lb sliced mushrooms
  • 1 small red onion thinly sliced
  • 1 small green bell pepper thinly sliced
  • 1 small red bell pepper thinly sliced
  • 1 2.5-ounce can sliced black olives drained
  • 1/2 teapoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon fennel seeds
  • 1/4 teaspoon crushed red pepper flakes
  • 1 13-ounce jar pizza sauce
  • 1 lb gnocchi cooked according to package directions
  • 1 1/2 cups mozzarella cheese shredded
  • 1/4 cup grated parmesan

Instructions
