White Bean, Sausage and Kale Tortellini

I’m all for quick and easy recipes, especially during a long work week. After a very busy day at work, the last thing I want to do is stand in a hot kitchen cooking all night. That’s where this White Bean, Sausage and Kale Tortellini comes in. It’s fast. It’s delicious and you won’t be able to get enough of it, I promise. A few basic store-bought staples helps get this dinner on the table in 30 minutes. This also reminds me of this tortellini soup that is just as good.


So I know that it’s White Bean Sausage and Kale Tortellini but you could also make this as White Bean Sausage and Kale Ravioli. Use whatever flavor of ravioli or tortellini you like. And of course you can use regular pasta or even gnocchi as well. It’s a quick and easy recipe that I hope you’ll try!


White Bean, Sausage and Kale Tortellini

Ingredients
- 3 tablespoons olive oil divided
- 1 pound Italian sausage hot or mild
- 1 small shallot minced
- 2 garlic cloves minced
- 1 teaspoons fennel seeds
- 1/2 teaspoon crushed red pepper flakes
- 15 ounces canned white beans drained and rinsed
- 2 sprigs fresh rosemary chopped
- 10 ounces packaged spinach and cheese tortellini
- 4 ounces Tuscan kale chopped
- Kosher salt and coarse black pepper
- 1/4 cup fresh basil leaves sliced
- 1/2 cup grated parmesan plus more for garnish
Instructions
- Set a large skillet over medium heat. Drizzle with 1 tablespoon olive oil and add the sausage. Break it up with a spoon and cook until crispy and no longer pink, about 5 to 8 minutes. Stir in the shallot, garlic, fennel seeds and crushed red pepper flakes and cook for another minute or so. Add the beans and rosemary and cook for another 2 to 3 minutes to warm through.
- Meanwhile, cook the pasta according to package directions. Reserve 1 cup of cooking liquid and drain. Add the pasta, reserved liquid and kale to the skillet and cook until the kale has wilted. Season with salt and pepper and stir in the basil and parmesan cheese. Cook until the sauce has thickened. Serve with more parmesan and enjoy!
