Banana Chocolate Chip Beignets

Ingredients

  • Vegetable or canola oil for frying
  • 2 large eggs
  • 1 large banana mashed
  • 3/4 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup mini chocolate chips
  • Powdered sugar for serving

Instructions

  • Fill a medium pot halfway with oil and heat to 360°F.
  • In a large bowl, whisk the eggs until smooth. Add the mashed banana, milk and vanilla and whisk until well combined. Add the flour, sugar, baking powder, salt, cinnamon and nutmeg and fold in until just combined. Stir in the chocolate chips.
  • Once the oil is hot and reaches temperature, drop the batter by spoonfuls and fry until golden brown and cooked through, about 4-6 minutes. Use a slotted spoon to remove the beignets from the oil and place onto paper towels or on a wire rack set over a baking sheet. Continue frying the rest of the batter, allowing the oil to reach temperature in between each batch.
  • Dust the tops liberally with powdered sugar and serve immediately. Enjoy!
