8ounceswhite chocolatechopped
3tablespoonscoconut oil
1/2teaspoonvanilla extract
1/8teaspoonimitation vanilla extractoptional
1tablespoonrainbow sprinkleschopped
3semi-ripe bananas
1.75qtVanilla or Birthday Cake flavored ice cream
3ouncessoft lady fingers or sponge cakechopped
1cupfresh whipped cream
2tablespoonsmulti-colored sprinklesfor topping
1/4cupmaraschino cherriesoptional
Instructions
Place the chopped chocolate and coconut oil in a bowl and set over a medium pot of barely-simmering water, making sure the bottom of the bowl does not touch the water. Cook, stirring often, until the chocolate has melted and is completely smooth. Remove from the heat and let cool slightly. Stir in the vanilla and imitation vanilla (if using). Once the chocolate has cooled down, gently stir in the sprinkles just until combined. You don't want to over mix or else the colors will bleed into the chocolate!
To assemble the sundaes, peel the bananas crosswise and then slice each half lengthwise. Place two pieces of banana in six bowls. Top each with two scoops of ice cream and with some of the chopped lady fingers. Spoon some of the funfetti fudge over the top and dollop with whipped cream and sprinkles and cherries (if using). Serve immediately and enjoy!
