This Super Easy Apple and Ricotta Cake is made using a box of store-bought pancake mix and swirled with apple butter and ricotta!

4cupscomplete pancake mix
1teaspoonapple pie spice
1teaspoonvanilla extract
1/4cupmaple syrupplus more for serving
2mediumapplescored and diced
3/4cupapple butter
3/4cupsmooth ricotta cheese
Vanilla ice creamfor serving
Instructions
Preheat oven to 350°F. Grease and flour a 9x13-inch baking pan and set aside.
In a large bowl, whisk together the pancake mix, 2 1/2 cups water, apple pie spice, vanilla and maple syrup until smooth. Fold in the apples. Pour into the prepared baking pan and smooth out as evenly as possible.
Dollop the apple butter and ricotta on top spacing them out evenly. Then use a butter knife or a long skewer to swirl everything together. Bake until golden brown and a toothpick, inserted in the middle, comes out clean, about 35 to 40 minutes.
Remove from the oven and allow to cool for about 15 minutes before slicing. Serve warm with a scoop of ice cream and a drizzle of maple syrup. Enjoy!
