Super Easy Apple and Ricotta Cake

This Super Easy Apple and Ricotta Cake is made using a box of store-bought pancake mix and swirled with apple butter and ricotta!

Ingredients

  • 4 cups complete pancake mix
  • 1 teaspoon apple pie spice
  • 1 teaspoon vanilla extract
  • 1/4 cup maple syrup plus more for serving
  • 2 medium apples cored and diced
  • 3/4 cup apple butter
  • 3/4 cup smooth ricotta cheese
  • Vanilla ice cream for serving

Instructions

  • Preheat oven to 350°F. Grease and flour a 9x13-inch baking pan and set aside.
  • In a large bowl, whisk together the pancake mix, 2 1/2 cups water, apple pie spice, vanilla and maple syrup until smooth. Fold in the apples. Pour into the prepared baking pan and smooth out as evenly as possible.
  • Dollop the apple butter and ricotta on top spacing them out evenly. Then use a butter knife or a long skewer to swirl everything together. Bake until golden brown and a toothpick, inserted in the middle, comes out clean, about 35 to 40 minutes.
  • Remove from the oven and allow to cool for about 15 minutes before slicing. Serve warm with a scoop of ice cream and a drizzle of maple syrup. Enjoy!
