Cherry Almond Cake

This Cherry Almond Cake is a quick and easy dessert that you can whip up when you have fresh cherries lying around. You can even switch things up a bit and use other fruit like strawberries, raspberries, blueberries or even blackberries. During other parts of the year you can use plums, peaches or nectarines. All this to say that it’s a very versatile cake.

Equipment

Ingredients

  • 2 1/3 cups almond flour
  • ¼ cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs beaten
  • ½ cup unsalted butter melted and cooled
  • 1 teaspoon vanilla extract
  • ¼ teaspoon almond extract
  • ½ cup fresh cherries pitted and halved
  • ¼ cup sliced almonds
  • powdered sugar for dusting

Instructions

  • Preheat oven to 325°F. Line a 8-inch round cake pan with parchment paper, cut into a circle to fit, and then grease with cooking spray; set aside.
  • In a large bowl, whisk together the almond flour, sugar, baking powder, baking soda, and salt. Make a well in the center of the bowl and add in the beaten eggs, melted butter, vanilla and almond extract. Stir until well combined.
  • Pour into the prepared pan and smooth out into an even layer. Top with the cherries and sprinkle with almonds. Bake until golden brown and a toothpick, inserted in the middle, comes out clean, about 35 to 40 minutes. Remove from the oven and let cool for 15 minutes before removing the cake from the pan onto a plate to cool completely. Dust with powdered sugar before cutting and serving. Enjoy!
