Classic Apple Pie

Everyone, and I do mean everyone, should know how to make a Classic Apple Pie. I feel like it’s the quintessential American dessert. The one dish you know always keep up your sleeve. Mainly because it’s so tasty, especially served with ice cream on top. Some people like their apple pies with Cheddar. This one here is as basic and classic as they come. No frills but lots and lots of thrills for us.

Ingredients
Crust:
- 3 ½ cups all-purpose flour
- 1 tablespoon granulated sugar
- ½ teaspoon salt
- 12 tablespoons unsalted butter cubed and chilled
- 8 tablespoons vegetable shortening
- 8 to 10 tablespoons ice water
Filling:
- 4 large granny smith apples peeled and thinly sliced
- 4 large pink lady apples peeled and thinly sliced
- ⅔ cup light brown sugar
- ¼ cup granulated sugar
- 3 tablespoons cornstarch
- ½ teaspoon ground cinnamon
- ¼ teaspoon freshly grated nutmeg
- ¼ teaspoon ground ginger
- ¼ teaspoon cardamon
- ¼ teaspoon cloves
- ¼ teaspoon salt
- 1 teaspoon lemon zest
- 1 tablespoon fresh lemon juice
- 2 tablespoons cold unsalted butter cubed
- 1 large egg white beaten with splash of water
- 1 tablespoon raw turbinado sugar
