Equipment

  • Medium pot
  • Mixing bowl
  • Piping bag with tip

Ingredients

  • 12 large eggs
  • ¼ cup whipped cream cheese softened
  • ¼ cup mayonnaise
  • 1 tablespoon spicy brown mustard
  • ½ teaspoon Kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon granulated garlic
  • ¼ teaspoon paprika
  • 1 small Persian cucumber quartered and thinly sliced
  • ½ small red onion cut in half and then thinly sliced
  • 2 scallions thinly sliced
  • 2 tablespoons capers drained
  • 1.5 ounces lox
  • 2 tablespoons everything bagel seasoning

Instructions

  • Fill a medium pot with cold water and bring to a boil. Using a slotted spoon, carefully lower in the eggs and boil for 8 minutes. Remove from the heat and carefully drain out the hot water. Run cold water over them until they’ve cold off, and then peel.
  • Cut the eggs in half and scoop out the yolk into a large bowl, placing the whites onto a platter. Add the cream cheese, mayo, mustard, salt, pepper, garlic and paprika. Mash with a fork until somewhat smooth. Transfer to a piping bag and pipe the mixture into each of the egg whites.
  • Top each with cucumber, onion, scallions, capers lox and bagel seasoning. Serve immediately or cover loosely with plastic wrap and store in the fridge until ready to serve. Eggs can be made a day in advance. Enjoy!

Notes

If you can’t find store-bought everything bagel seasoning, just mix together 1 teaspoon each, white sesame seeds, black sesame seeds, poppy seeds, salt, dried garlic and dried onion!
