Ingredients

18large eggs
1/2cupwhole milk
1teaspoonsalt
1/2teaspoonblack pepper
1cupshredded Cheddar cheese

Instructions
Preheat oven to 425°F.
Line a large heavy-duty rimmed baking sheet with parchment paper and grease lightly with cooking spray. Lay the bacon slices in a single layer and bake until crispy, about 12 to 15 minutes. Spread out the tater tots on a separate baking sheet and bake until golden brown and crispy, about 18 to 20 minutes.
Remove the bacon from the oven and transfer to a plate lined with paper towels. Then discard most of the bacon grease. Once the tater tots are done, arrange the bacon and tots onto the large baking sheet where you cooked the bacon, in a single layer.
In a large bowl, whisk the eggs, milk, salt and pepper together until well combined. Carefully pour over the tots and bacon, allowing the egg mixture to spread out evenly. Bake until puffed up, but still wobbly in the center, about 8 minutes. Carefully remove from the oven and sprinkle the top with the cheese. Return to the oven to allow the cheese to melt and the eggs to finish cooking. It should all puff up and no longer jiggle in the center when you move it, another 5 minutes or so. Remove from the oven and allow to rest for about 5 minutes. Sprinkle with scallions and then slice into thin rectangles. Serve with warmed tortillas and different toppings and allow your guests to create their own tacos. Enjoy!
