Grilled Peanut Butter S'mores Pizza

Melted butter works double duty in this recipe. The butter in the pizza dough not only gives it extra flavor but it also allows it to brown nicely on the grill. While brushing the rolled dough with butter helps prevent it from sticking to the grill! This decadent dessert pizza is a must this summer grilling season!

Ingredients

Dough

  • 1 cup warm water
  • 1 teaspoons granulated sugar
  • 2 1/4 teaspoons active dry yeast
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 3 tablespoons melted unsalted butter

Pizza

  • 4 tablespoons melted unsalted butter
  • 1 cup creamy peanut butter
  • 1 cup chopped chocolate or chocolate chips
  • 1 cup mini marshmallows
  • 4 graham crackers crumbled

Instructions

  • To make the dough, combine the warm water, sugar and yeast. Set aside and allow to bloom for 10 minutes until frothy and foamy.
  • In a large bowl, combine the flour and salt. Add the water and yeast mixture along with the melted butter. Mix with a wooden spoon until the dough comes together. Transfer to a floured work surface and knead until smooth. Grease a large bowl with melted butter and add the dough. Cover loosely with plastic wrap and a kitchen towel. Set in a warm spot and allow to double in size, about 1 hour.
  • Punch the dough down and then divide into three even pieces, roughly about 209 grams each. Form each piece into a ball and place on a lightly floured platter or baking sheet. Cover loosely and allow to rest once more until doubled in size, about 1 hour.
  • Preheat an outdoor grill or stovetop grill pan over medium heat.
  • Roll out each dough to about a 9-inch circle. Brush with melted butter and place, buttered-side down, onto the hot grill. Cook for about 2 minutes on the first side or until slightly charred and golden. Flip over and cook for another 2 minutes. Transfer to a platter and continue grilling the remaining pizzas.
  • Spread each grilled pizza with peanut butter and sprinkle with chocolate, marshmallows and graham cracker pieces. Return to the grill, cover and cook until the chocolate has melted and the marshmallows have softened, about 2 to 3 minutes. Remove from the grill, slice and serve immediately. Enjoy!
