2pintsheirloom cherry tomatoes
1medium shallotthinly sliced
6garlic clovessmashed and peeled
1/3cupolive oil
1tablespoonbalsamic or red wine vinegar
1teaspoonKosher salt
½teaspoonfresh cracked black pepper
¼teaspooncrushed red pepper flakes
4sprigs fresh thyme
1sprig fresh rosemary
½teaspoondried oregano
8ouncesburrata
4 to 6fresh basil leavestorn
Crusty breadsliced (for serving)
Instructions
Preheat oven to 400°F. Place the tomatoes, shallot and garlic in a 2-quart baking dish. Add the olive oil, vinegar, salt, pepper, red pepper flakes, fresh herb sprigs and oregano. Toss until evenly combined, and bake until the tomatoes have roasted and just begun to burst, 25 to 30 minutes.
Transfer the warm tomato mixture (with the juices) to a serving bowl. Top with the burrata, basil, a drizzle of olive oil and a pinch of salt and pepper. Serve with crusty bread. Enjoy!
