2tablespoonsolive oil
6ouncespepperoni slicesthinly sliced
1/3cuppopcorn kernels
1/2teaspoonKosher salt
1/4teaspoonblack pepper
1/2teaspoongarlic powder
1/2teaspoondried basil
1/2teaspoondried oregano
1/2teaspoonparsley
1/4teaspoonred pepper flakes
1/4cupgrated parmesan cheese
Instructions
Set a large pot over moderate heat with the olive oil. Once hot, add in the sliced pepperoni and cook, stirring often, until crispy, about 5 minutes. Use a slotted spoon to remove the pepperoni onto a plate lined with paper towels.
Add the kernels to the pot and cover with a tight fitting lid. Cook over medium-low heat until more of the kernels have popped and the popping sound has mostly subsided, about 3 to 5 minutes. Keep shaking the pot every now and then.
Turn off the heat and remove the lid. Allow to cool slightly before adding in the seasonings, pepperoni and parmesan. Place the lid on and carefully shake it all up to evenly distribute. Serve immediately while still warm. Enjoy!
