Ingredients
4Sumo Citrusrinsed and dried
1/4cupblack peppercorns
1/4cupflaky salt
2tablespoonsdried minced garlic
2tablespoonsdried minced onion
Instructions
Preheat oven to 175°F. Place a wire rack over a baking sheet and set aside.
Peel the Sumo Citrus in large sections and then using a sharp paring knife, cut off as much of the pith as possible. Lay the peels, skin side up, in a single layer onto the prepared baking sheet.
Place in the oven and allow to fully dry out, about 1 hour to 1 1⁄2 hours. Remove from the oven and cool completely. Place into a spice grinder and pulse until it forms a coarse mixture.
Transfer to a bowl. Then place the black pepper, salt, garlic and onion into the grinder and plus as well. Pour into the bowl with the Sumo mixture and then toss everything together.
Transfer to an airtight container or spice jar and store at room temperature. Use it on anything from steaks to chicken to fish or vegetables. Enjoy!
