Alaska Dip Trio

I know I’ve mentioned on here before, but allow me to plug it just one more time. I worked on a cookbook with Eater called Eatlerland. It’s a great cookbook filled with so many amazing classic regional recipes from across the country. You should definitely check it out. Last time, I shared the recipe for these Migas Tacos that are incredible.

This time around, I’m sharing the recipe for this Alaska Dip Trio. It’s a 3-for-1 recipe that features three different dips from a restaurant in Alaska. We have a Smoked Salmon Spread (which happens to be my personal favorite). Perfect served with pilot bread, if you can find it. Or delicious with Ritz crackers. Then we have a Kenai Dip, which is like a pimento cheese but with a spicy kick. And lastly, the Ranchovy Roe Dip is like an elevated homemade ranch dip topped with salmon roe. It’s the type of dip you pull out at parties when you want to impress. Make them all or just one, either way, you can’t go wrong!

Alaska Dip Trio

Equipment

  • Stand or hand mixer
  • Mixing bowls

Ingredients

Smoked Salmon Spread

  • 8 ounces cream cheese softened
  • 1/2 cup mayonnaise
  • 1/2 cup minced shallots
  • 2 tablespoons capers
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon grated fresh horseradish or bottled
  • 8 ounces smoked salmon skin removed, flesh crumbled
  • Fresh dill for garnish
  • Pilot bread (or cracker of your choice to serve)

Kenai Dip

  • 2 cups grated white Cheddar cheese such as Beecher's Flagship
  • 3/4 cup mayonnaise
  • 1 tablespoon Calabrian chiles
  • 1 teaspoon granulated garlic
  • 1 teaspoon granulated onion
  • 1/8 teaspoon liquid smoke
  • Crackers to serve, such as Triscuits

Ranchovy Roe Dip

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup buttermilk
  • 1/4 teaspoon salt
  • 1/4 teaspoon granulated onion
  • 1/4 teaspoon granulated garlic
  • 1/4 teaspoon fresh lemon juice
  • 1/2 teaspoon fish sauce plus more if needed
  • 1/4 teaspoon Barnacle Kelp Powder (optional)
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh mint
  • 1 tablespoon chopped fresh parsley
  • 2 ounces cured salmon roe
  • Wavy totato chips to serve

Instructions

Smoked Salmon Spread

  • In a stand mixer fitted with the paddle attachment, combine the cream cheese, mayonnaise, shallots, capers, lemon juice, and horseradish. Mix on low until slightly smooth, 1 to 2 minutes.
  • Add the crumbled salmon and stir by hand until just blended through. Garnish with fresh dill and serve with pilot bread or your choice if cracker.

Kenai Dip

  • Combine the Cheddar, mayonnaise, chiles, granulated garlic and onion, and liquid smoke in a bowl and mix well. Serve with crackers or veggies.

Ranchovy Roe Dip

  • Combine all the ingredients except for the salmon roe in a bowl and stir until smooth. Taste and adjust seasoning accordingly, adding more fish sauce if needed.
  • Pour into a serve bowl and top with the salmon roe. Serve alongside the chips. Enjoy!
